THE PUBLIC CATERING SYSTEM IN UZBEKISTAN: TRADITIONS, PLANS, AND PRACTICAL OUTCOMES (BASED ON THE EXAMPLES OF THE RUSSIAN EMPIRE AND SOVIET PERIODS)

The article examines the changes in the public catering system during the periods of the Russian Empire and Soviet rule, the introduction and development of new forms of food service, and the public’s attitude toward these transformations. In particular, it discusses the establishment of teahouses, restaurants, buffets, and catering facilities attached to hotels in urban and rural areas at the end of the nineteenth century, as well as the activities of factory kitchens, canteens, home kitchens, restaurants, teahouses, cafés, snack bars, and buffets during the Soviet era. Although various plans and programs were introduced to develop the sector, insufficient attention was paid over the years to solving problems related to the functioning of public catering institutions in residential areas, educational institutions, and large organizations. The article also evaluates the role of the public catering system in everyday life, service culture, and the social infrastructure from a historical perspective.
